Nelos Pizza breaks from the standard pie, serving up 15-centimeter round individual pizzas—called "rounders"—that can be combined in boxes of two or four, allowing for personal choice and the chance to sample multiple flavors. The dough is matured for up to 72 hours and cooked at high heat for a crisp, light bite, drawing on fine-dining techniques but translating them into a casual, shareable street food.

The menu spans eight variations, from a Margherita with San Marzano tomato to combinations like mortadella with pistachio or sausage with feta cream. Dips—including sriracha mayo and miso-lemon—encourage playful customization. The founders, three brothers with family roots in the area, use quality Italian cheeses and even source some vegetables from their own garden. For dessert, a brookie blends brownie and cookie with caramel and nuts. Cocktails such as a strawberry-basil mix round out the offering, reflecting an attention to detail and local connection.
